Spinach, Mushroom and Garlic Rice. This is a brilliant way to liven up your rice! 210 Cal, 2g fat, 42g Carbs and 8g protein costing 35p per 250g portion! This recipe makes 4 servings.

Before I get into the recipe, I want to say a big thank you to all of you who have visited the website over the past few days. I am amazed at how many of you are reading this!

The last few days I have been attempting and failing to make some instruction videos to run alongside the blog, so rather then just reading you can follow along with me.

Just when I was about to give up, things slipped into place, (with some, well, we will call it hiccups along the way!)

I dragged my poor husband out after his morning golf session and I picked up the bits I needed to be able to make the videos I want to.

Am really excited, and I hope you are too!

Now that I wittered on, Let’s get to the most important thing.

The Food!

I love rice, it goes with pretty much everything. However, it can be a bit meh.

A dull side dish used to fill out a meal.

Now I am not a fan of boring. I use rice as a dish all of it’s own. It holds it’s own against the main course, and brings it’s very own burst of flavour.

This will be my second rice dish i’ve posted and there is literally hundreds more to come.

This is a great way to brighten up your rice, sneak in some extra iron and fill your tummy!

Nutrition and Cost

Spinach, mushroom and garlic rice, well each 250g serving is going to give you 210 calories, 2g fat, 24g carbs and 8g protein.

Costing 35p per portion, you can’t go wrong!

Keep this recipe as a way to vary your diet. It freezes well, and is a staple of bulk cooking and meal prep in my household!

  • Medium sized pot
  • frying pan


  • 200 g Long grain rice Use whatever your preference, it works with all. do adjust your cooking times accordingly
  • 300 g Mushrooms thinly sliced
  • Half Onion Diced
  • 2 cloves Garlic
  • 100 g spinach I used frozen, but fresh will work too!
  • 400 ml water


  • Boil the water in the kettle
  • Add to pan and place on heat
  • Add the rice, pop a lid on it
  • while the rice is cooking prepare your other ingredients
  • Put a frying pan on a medium heat, add everything apart from the spinach
  • Cook until the onions and mushrooms are soft 5-10 minutes
  • For the last 2 minutes of cooking put the spinach in the frying pan
  • add generous splash of water to the frying pan
  • Cover with lid. set to one side
  • Once rice is cooked to your liking remove from heat
  • Mix together rice and the other ingredients.
  • Serve
